Kolkata has a relationship with Chinese food that no other Indian city can claim. This love affair started generations ago, when Hakka Chinese immigrants settled in the city’s Tiretti Bazaar and later in the tannery lanes of Tangra, building what remains India’s only true Chinatown. Today, Kolkata’s Chinese food landscape stretches from oil-drum-lit alleys in Chinatown to moon-gate entrances in Ballygunge to five-star kitchens with open stations. There are restaurants that have barely changed since the 1950s and restaurants that opened last year and already have a following.
