Sadhya translates to a banquet or grand feast in Malayalam, and there’s something wonderfully interesting in seeing your meal arrive. The banana leaf fills up bit by bit: vegetables, pickles, thoran, curries, chips, until the rice lands and you finally get to start mixing your way through it.For Malayalis, the fun is often in the familiarity: knowing which dish you want more of, waiting for the next round of rice, and quietly keeping track of how much room you’ve left for prathaman. If this is your first Sadhya, though, that same full leaf can look like a lot to figure out. Either way, this guide will come in handy.If you’re a Sadhya First-TimersA Sadhya comes with its own rhythm, and if you’ve never had one before, watching everyone around you move through the meal can make you feel like you’ve missed a memo. But trust us, you haven’t. Here are a few quick things before you sit down:The banana leaf is part of the experience. It gives all the little accompaniments their own place, while leaving the wider section free for rice and curries. It’s also a traditional, practical and biodegradable way of serving the feast.Let the sides come first. You’ll usually start with the vegetables, pickles and other accompaniments before getting into rice with parippu and ghee, followed by sambar, rasam and the sweets. Don’t worry if the order varies slightly from place to place.Ask about anything unfamiliar. There can be a lot on your leaf, and nobody expects you to know every curry by sight. Ask your server what something is or how it’s usually eaten. They’ll be happy to guide you.Your right hand is traditionally the way to go. Rice and curries are mixed by hand, usually with the right hand. If you’d rather use cutlery, you can always ask.Decline refills early. Sadhya servers are quick with their next ladle, so if you’re done with something, say no before it reaches your leaf.Don’t take more than you can eat. The feast is generous for a reason, but you don't have to accept every refill. Taking only what you’ll finish is the easiest way to avoid waste.Keep some space for payasam. This is the one piece of advice you’ll be glad you followed.Fold your leaf towards you when you’re done. Traditionally, this signals that you enjoyed the meal. Folding it away carries a negative connotation.Come as you are.
