THE FORAGER'S TABLE: DARJEELING
What if a menu began not with a dish, but with a landscape?
This monsoon, the OMO culinary team travelled through Darjeeling and Kalimpong, spending time among tea estates, forest trails, local markets and small producers of the Eastern Himalayas. The intention was simple: to understand what the hills had to offer, in their own season and in their own time.
The monsoon revealed a landscape rich with wild greens, bitter herbs, sharp fruits and ingredients deeply rooted in local food traditions. We returned with nettle, mugwort, sawtooth coriander, tree tomatoes, fiddlehead ferns, black turmeric, Kalimpong cheese and timur pepper, alongside teas and other produce from the hills.
Some came straight into the kitchen. Others found their way into ferments, infusions and preserved preparations, allowing the ingredients to take on new forms while holding on to something of where they came from.
The Forager’s Table — Darjeeling brings this journey to OMO through a menu shaped by the ingredients we encountered, the traditions we learnt from and the possibilities they opened up in our kitchen.
A little of the Eastern Himalayas, gathered in the monsoon, finding its way to the table.
