Rooted in curiosity and a deep respect for regional traditions, it highlights India’s lesser-seen culinary identities through a contemporary, globally aware lens.The current menu of Nila spotlights the distinctive ingredients of Nagaland bringing its smoked meats, foraged greens, bamboo, rice traditions and fermentation techniques into a refined, tasting-menu format. Rather than recreating classics, the kitchen reinterprets the cultural fabric that shapes them: the rhythms of jhum fields, the warmth of community kitchens, and the elemental interplay of land, fire, and seasonality that define Naga food culture.
