Sous With is a year-long culinary platform that celebrates India’s finest sous chefs as they take centre stage at Sienna Calcutta. An initiative in collaboration with Elemental and Hapusa, Sous With aims to spotlight six rising stars from some of the country’s leading restaurants, who will take over the Sienna kitchen for exclusive pop-ups, serving curated tasting menus and à la carte dishes that reflect their roots and stories. With this, we honour the backbones of our kitchens and bring a taste of their worlds to our city, one story at a time.
Sous With Masque & Paradox:
Fresh off their win for best hospitality in Asia, the second edition of Sous With at Sienna is pleased to host chefs Shiv Mandrawal (CDC, Masque) and Murali Nayak (CDC, Paradox), right here at our base at 49/1 Hindustan Park. Chef Murali is mixing his childhood flavours with a touch of Calcutta, while Chef Shiv is bringing together his Uttarakhand roots and the dishes that shaped his years cooking in Bombay at Masque - often hailed as one of India's most forward-thinking restaurants.
