About the Event

Intercontinental and Authenticook bring to you a special pop-up with home-chef Prashasti Singh to savour the flavours of heirloom recipes from the Rajput kitchens of Rajasthan, Madhya Pradesh and Bihar.

Chukander ke shikampuri kebab served with tangy mango chutney (V)

Traditional “melt in your mouth” beetroot kebabs stuffed with a yogurt surprise inside


Stuffed Jodhpuri mirch vada chaat (V)

A Marwar delicacy. Batter fried Bhavnagri chilli stuffed with onion, potato and spices, served with curd to make this traditional delicacy a delicious chaat


Shikampuri kebab (NV)

These melt in the mouth chicken shaami kebabs are stuffed in the centre with cream and and are truly a creation fit for the royals

 

Laal maas papdi chaat (NV)

When you talk about rajput cuisine, you just can’t ignore the crowd favourite, laal maas. The aroma of desi ghee and spiciness of red chillies makes this mutton preparation a must-try!



Main course


Jungli maas (NV)

Popularly known as “hunters delight”, originated during shikaars, when hunters would cook with game meat. Our take uses lamb to recreate this traditional dish with only 5 ingredients. We promise you will not find this anywhere in the maxim city

 

Dhungar murg (NV)

This chicken preparation will blow your mind, it’s rustic and oh so full of flavour. Packed with smokey flavours that is infused using the ancient dhungar method

 

Jodhpuri gatta curry (V)

Fennel and kasuri methi scented gatta (gram flour dumpling) in yogurt gravy, from the famed Jodhpur darbar

 

Baghelkhand rikmach rizaaz (V)

This is a famous traditional dish of Bagelkhand, Madhya Pradesh. This curry from “the royal house” of Rewa is a popular dish of central India.

 

Rajasthani kadhi (V)

If you are in a rajput household, your Sunday lunch is incomplete without this version of kadhi

Jodhpuri kabuli is a royal and exotic dish presented in alternate layers of rice and vegetables gravy cooked in yoghurt with toppings of fried onions, crunchy cashews, raisins and mild spices
